What beautiful typeface is their logo (I bet it's custom handlettering)... and how would it be classified? Swash-serif-flourish-display?

Marc, a good question. But I think it's best redirected to Jonathan Hoefler http://bit.ly/Hoefler - he looks as though he'd know that sort of thing. But I don't - 'cos me: I'm a modernist.
